"What's for Dinner Honey?"



Sweet and Spicy Salmon: From Kellie Lynch

5 1 Tablespoon olive oil

2 garlic cloves

1 quarter-size piece fresh ginger root

2 teaspoons curry powder

1 teaspoon ground cumin

1/2 teaspoon cayenne

1 teaspoon kosher salt

3 tablespoons chopped fresh cilantro leaves

4 salmon steaks

2 tablespoons sweetened or unsweetened coconut (toasted or not), for garnish

1 lime, quartered

Place the olive oil, garlic, ginger, curry, cumin, cayenne, salt and 1 tablespoon of the cilantro
 in food processor fitted with steel blade. Process until the mixture becomes a chunky paste.

Coat both sides of the salmon steaks with the paste,  cover and refrigerate at least 1 hour or as long as overnight. 
Prepare grill. Place salmon steaks on grill and cook for about 5 minutes on each side. Serve immediately,
 garnished with remaining cilantro, coconut and lime wedges.
