"What's for Dinner Honey?"
Easy Peasy Lemon Squeezy Lemon Pie- from Janet
Redhead Betty's mother, the Duchess {more here> and here>} is very particular about lemon anything. It has to be seriously pucker-worthy-lemony for her to rave, and rave she did about this pie, brought to a party by her very stylish {and obviously very smart} friend Janet Pearson.
1 large lemon as thin skinned as possible
1 1/2 cups sugar
4 eggs
1 teaspoon vanilla
1 stick melted butter
Wash the lemon well. Cut the green stem part off {just a tiny bit} and cut the lemon into quarters. Leave the peel on. That's the easy peasy part, really. Leave the peel on.
Put all the ingredients in a blender and hit "liquify" until it looks good and pulverized. Pour into an 9" unbaked pie shell. Bake at 375 for 40 min. Cool, then chill in the refrigerator. If you find it too lemony, whipped cream is a fine antidote {to anything really, come to think of it}.
