"What's for Dinner Honey?"
This recipe is just in from Pete Dickason {Local Pete}. He sends Betty recipes from the road, the restaurant, the backyard BBQ smoker. We never know when we'll get one, but we always enjoy them. They're the man-side of making a meal, and here's his latest
"I just had {ok, I'm having} a lousy Mojito so I thought I'd send you a recipe for a great one. Courtesy of Nico and his amigos at Mama's and Tapas in Pucon, Chile."
Fill a glass to the brim loosely with mint leaves. Squeeze in the juice of a whole lime. Toss in the lime halves. Smash the mint and limes with a muddler. Fill the glass with ice. Add a shot of simple syrup and a shot of good dark rum. Stir or shake this up. Top off with seltzer or club soda. Adjust sweetness with more or less syrup.
