"What's for Dinner Honey?"

Hello!  Cinco de Mayo has given us a reason to get summer started early.  So mix up some peach/basil sangria, make some fish tacos, and chop up a batch of this mango salsa.  Then put on your down coat and sit outside to enjoy...


Mango Salsa

2 cups chopped pitted peeled mango
1 cup chopped red bell pepper
2/3 cup chopped red onion
1 tablespoon finely chopped jalapeno pepper {optional}
1/3 cup chopped fresh cilantro
2 tablespoons fresh lime juice
4 teaspoons olive oil
salt and pepper

Peel and chop the mango, toss into a glass or ceramic bowl.  Add lime juice, olive oil, and jalapeno {optional}.  Mix that around and let it sit while you chop the red bell pepper, red onion and cilantro.  Dump into mango mixture and stir.  Add salt and pepper to taste.  It's best left to blend flavors for at least an hour.
