"What's for Dinner Honey?"
It may rain this weekend, but we're using the current snowfall as an excuse to make comfort food.
Darcy gave us two great chili recipes with a little kick to them {and Betty could use a little kick right now}. Simple and quick {add your own punch line there...}
Heartwarming Chili- from Darcy Woodyatt
Serves 8-10
3 lbs ground beef
3 large onions, chopped [about 3 cups]
1 large green bell pepper, seeded and chopped
1 T minced garlic
1/3 C chili powder
1 1/2 T ground cumin
1 1/2 T oregano, crumbled
1 1/2 tsp crushed hot red pepper flakes
1 can [28 oz] crushed tomatoes
1 can [14 1/2 oz] stewed tomatoes
1 1/2 C cooked kidney beans, rinsed and drained
2 C beef broth
salt & pepper to taste
For garnish: shredded Monterey Jack or Cheddar cheese, diced avocado and sour cream
Brown meat and drain off fat. Mix cooked meat and all remaining ingredients {excluding garnishes} in large pot {or crock pot} and simmer for 2-3 hours.
