"What's for Dinner Honey?"

 

Puff Pasty with Fig Jam, Prosciutto and Caramelized Onions- from Nanette Walsh

Puff pastry of your choice {or phyllo or pastry cups}
fig jam
4 medium red onions
prosciutto fried to crisp

Carmelize onions.  Spread fig jam over the top or the puff pastry, sprinkle with crispy prosciutto and carmelized onions.

Alternately, you can fill phyllo or tart cups {find them in the frozen section near pie crust} with a tiny spoonful of jam, a little carmelized onion and sprinkling of proscuitto.  Top with a grating of Parmesan Reggiano if you're feeling cheesy.

Bake at 350 for about 15-20 minutes or until brown.  Cut puff pastry into small slices.

To carmelize onions:  Slice onions into very thin slices.  Heat olive oil in a heavy skillet.  Add onions and a small amount of sugar and slowly cook over medium heat.  Cook until onions are caramel colored, stirring often, 30-40 minutes.  For more flavor, add a touch of balsamic vinegar at the end of cooking.

 Champagne is the perfect accompaniment to fig, just sayin'......
