chicken tortilla soup

"What's for Dinner Honey?" 

We're using the existing, expected,  snowfall as an excuse to make comfort food.  Darcy gave us this soup with a little kick to it {and Betty could use a little kick right now}.


Chicken Tortilla Soup- from Darcy Woodyatt
Serves 6

1 tsp olive oil
1 C chopped onion
2 cloves garlic, minced
2 C cooked chicken, cut into strips
1 C frozen corn
1/4 cup dry white wine
1 T chopped, seeded, jalapeno pepper
1 tsp ground cumin
1 tsp Worcestershire sauce
1/2 tsp chili powder
2 cans {14 1/2 oz} chicken broth
1 28 ounce can tomato puree
1 can {14 1/2 oz} diced tomatoes

4 limes
tortilla chips, or fried corn tortilla strips
sour cream

In skillet, heat oil then add onion and garlic and saute until onion is soft. Transfer to large pot and add remaining ingredients [excluding limes, tortilla chips and sour cream] and simmer for 1 hour.  When ready to serve, rim bowl with a lime wedge then squeeze excess juice along with lime wedge into bottom of bowl. Pour soup into bowl over lime juice and wedge and add crushed tortilla chips and a dollop of sour cream to top.
