"What's for Dinner Honey?" 

It may rain this weekend, but we're using the current snowfall as an excuse to make comfort food.

Darcy gave us two chili recipes with a little kick to them {and Betty could use a little kick right now}. Simple and quick {add your own punch line there...}


Hearty Turkey Chili- from Darcy Woodyatt
Serves 6

1 teaspoon vegetable oil
1 large onion, chopped
2 medium garlic cloves, minced
2 medium carrots, sliced into rounds
1 lb lean ground turkey
2 T chili powder
1 tsp paprika
1 tsp cumin
1  1/2 teaspoons red pepper flakes
2 medium tomatoes, chopped
1 C canned tomato sauce
1 C chicken broth
1  1/2 Tapple cider vinegar
1  1/2 C cooked kidney beans, rinsed and drained
1 medium green bell pepper, chopped
salt & pepper to taste

Heat large skillet over medium heat.  Add oil and onion, saute until soft. Add garlic, carrots and cook until garlic is soft. Add ground turkey and brown meat.
Combine meat mixture and all other ingredients into large pot [or crock pot] and simmer 2-3 hours.

For garnish: shredded Monterey Jack or Cheddar cheese, sour cream
