"What's for Dinner Honey?"

Nan's Eiffel Tower Shortbread Cookies

They serve these charming [and delicious] little shortbread cookies at La Petite Maison at special occasions during the hoidays.  Find a fleur de lis or Eiffel Tower cookie cutter at LPM and make your own.  Joyeux Noel!

Preheat oven to 325 degrees

1 1/2 cups of sifted flour
3/4 cup confectioner’s sugar
1/4 teaspoon salt
1/2 pound of butter [2 sticks] softened to room temperature

Mix all ingredients together. Knead thoroughly until the consistency becomes doughy. Press very firmly into a mold approximately 8 inches in diameter. Bake in the preheated oven for about 45 minutes until shortbread is lightly browned and still springy to the touch. Let the shortbread cool in the mold and then run a knife around the perimeter of the mold to loosen it from the mold. Place on a baking  rack to continue to let it cool. Enjoy!

Recipe may also be baked using cookie cutters.  Adjust the baking time to achieve the desired result depending on the thickness of the cookie cutter used.
