"What's for Dinner Honey?"

Chocolate Pots du Creme with Peppermint Whipped Cream 

8 ounces good quality dark or semi sweet baking chocolate, coarsely chopped
2 T sugar
1 c heavy cream
4 egg yolks
1 t vanilla
fresh whipped cream
shaved chocolate

Melt the chocolate in a double boiler. Whisk in the sugar. Gradually add the cream, whisking constantly until smooth; remove from heat. In a medium bowl, vigorously beat the egg yolks. Gradually whisk 1/4 of the chocolate mixture into the yolks. Add the egg-chocolate mixture back into the pot with the warm chocolate mixture, whisking constantly. Whisk in the vanilla. Spoon into small pots de creme cups or cordial glasses and chill for an hour. Top each with the peppermint whipped cream and chocolate shavings or crushed candy cane.

Peppermint Whipped Cream


1/2 c heavy cream
2 to 3 t sugar
1/2 t peppermint extract

Pour cream into a chilled bowl and beat until it just begins to hold its shape. Add the sugar and peppermint extract , continue to whip until you have soft peaks.
