"What's for Dinner, Honey?"

When the weather turns even the remotestly, tiniestly bit warm– my thoughts turn to margaritas.

But this season, move over Marge– Paloma is in town.

It's a grapefruity, lightly limey, bubbly concoction that perfectly hides that heavy tequila taste that often haunts my day-after-too-many-margaritas tastebuds. {Did that even make sense?}

Anyway, Katie was the bartender extraordinaire on this one. She's officially made my summer Paloma-Perfect.

The Perfect Paloma from Katie


2 ounces of reposado tequila {or any good quality Blanco tequila}
3 ounces of fresh pink grapefruit juice {that's about 1 grapefruit}
1 ounce of fresh lime juice {that's about 1/2 lime}
1 ounce dark agave nectar
a splash of club soda


Pour the grapefruit juice, lime juice, tequila and agave syrup into a cocktail shaker and shake it until well mixed.
Pour into a highball glass filled with ice and add that little splash of soda water.
Serve with a lime wheel or wedge

If you're really missing your 'rita - you could nostalgically rim the glass with salt....
