"What's for Dinner Honey?" Broccoli and Stilton Cheese Soup


Who doesn't love a hot soup in the winter? Here's one more super easy {and vegetarian!} one to add to the list.

Broccoli and Stilton Cheese Soup from Kelly McDermott and BBC GoodFood

1 large onion, roughly chopped
1 tablespoon olive oil
1 large potato, peeled and cubed
4 cups vegetable stock
1 head broccoli, roughly chopped
3 ½ ounces crumbled Stilton cheese


Cook the onion in 1 tbsp olive oil in a large pan until soft {about 5 minutes}.

Add the potato and stock and simmer until the potato is tender {about 10 minutes}.

Add the broccoli and cook for 3-4 minutes until just tender but still bright green.

Add half the cheese and blend until smooth in the blender.

Season then serve with the rest of the cheese crumbled over top.
